An automatic pilot, including a 100 percent shut-off, shall be provided on each unit. Each table shall be provided with a gas thermostat. Minimum BTU inputs shall be 33,000 for size 1 tables, 39,000 for size 2 tables, and 52,000 for size 3 tables.
2.1.5 Standard compliance. All steam tables shall comply with the applicable requirements of ASTM Standard A167 and NSF International Standard No. 4. Types II and III tables shall conform to UL Standard No. 197. Type III tables shall conform to ANSI Standard No. 283.14.
2.1.6 Food pans. Food pans shall be procured separately and shall be of the size and quantities specified by the using agency.
2.2 User instructions (“Government unique” requirement). The steam tables shall be provided with a user’s instruction plate. The instructions shall be etched or die stamped on a stainless steel plate or shown on a photosensitive anodized aluminum plate. The plate shall be permanently attached to the attendant’s side of the table and shall contain the following instructions heading:
USERS’ INSTRUCTIONS
1. Fill steam table pan to proper level with hot water before turning on heat.
2. Keep appliance clean. Do not allow grease or stains to remain on metal parts. Do not use steel wool non-cleaning. Use a brush with cleaning powders and hot water to remove food particles and sediment.
3. After serving, turn off heat, drain water compartment, and thoroughly clean inside of compartment of all food particles and sediment.
4. Wash and rinse all foods pans and soup tureens after use and disinfect as instructed by those in authority.
2.3 Data nameplate (“Government unique” requirement). The steam table shall be furnished with a data nameplate in accordance with the applicable requirements of MIL-STD-130 except the requirements for: (a) Methods of applying, (b) Identification tags, (c) Information not required, and (d) Optional marking information shall not apply. The data nameplate shall be made of minimum 20 gauge corrosion-resisting metal and attached to the steam table by rivets, screws, or welding in such a manner as to meet the applicable NSF International sanitary requirements for this equipment. The plate shall contain the following information which shall be stamped, engraved, or applied by photosensitive means:
