3.1.3.4 Table mounted tilting. Table mounted tilting kettles shall be provided with two vertical supports and trunnions which allow the kettle to be tilted 90° from the normal position. A handle shall be attached to the kettle body.

3.2 Kettle options. Optional equipment such as:

- Steam trap assembly

- Steam pressure reducing valve

- 1-1/2 inch, 2 inch, or 3 inch drawoffs

- Cooking basket systems

- Cooking basket inserts

- Water fillers

- 1/8 inch perforated or solid disc strainers

- Kettle brush kits

can be ordered as specified in 7.1.

3.3 Standard compliance. The kettles shall comply with the applicable requirements Of ASME Sections IV and VIII, ASTM A 240, and NSF International Standard No. 4, as appropriate.

3.4 Users instruction plate. Each kettle shall have a metal user’s instruction plate which shall be permanently attached to the kettle in such a manner as to meet the applicable NSF International sanitary requirements for this equipment. The plate shall be mounted so as to be visible to the operator. The plate shall contain the following information:

USERS’ INSTRUCTIONS

1. Do not turn on steam unless water or food is in kettle.

2. Do not tamper with or obstruct safety valve.

3. Wash and sanitize kettle before and after each use. Wash with hot soapy water. Sanitize all food contact surfaces either by rinsing, spraying, or swabbing the kettle with a solution of 100 parts per million (ppm) available chlorine or 25 ppm available iodine. Rinse thoroughly without allowing water to enter into the control~ housing. Dry thoroughly inside and outside.

4. Leave cover open when not in use.

5. Do not put water in hot dry kettle.

6. When heating a cold kettle, allow the kettle to become warm before full pressure is applied. After kettle becomes warm, and before applying full pressure, open the safety valve momentarily to release any air trapped within the jacket.
