2.4 Holding pan. The holding pan shall be a nominal 20 inch by 12 inch (full size) food service pan, depth shall be no less than 2.5 inches, thickness shall be no less than 20 gage, and conform with CID A–A–50179, Pans, Food Serving.
2.5 Rack. The pan shall have a removable rack designed to support the contents placed in the pan. The rack shall be fabricated from stainless steel and shall cover the entire bottom of the pan, providing clearance for food particles between the rack and bottom of the pan.
2.6 Frame. The warmer shall be open on all sides to allow removal of warmed product without removing the pan. The base of the frame shall be so designed and constructed that it will provide a stable support for the warmer when operated on a tabletop or countertop. The pan shall be supported in such a manner that the pan bottom does not contact the tabletop or countertop.
2.7 On-off switch. The warmer shall have an on-off switch(es) to activate the heat unit. The switch(es) shall be visible and accessible to the attendent and located so as to prevent the attendent from contacting the reflector in normal operation.
2.8 Data name plate (Government unique requirement (see 5.5)). The food warmer shall be furnished with a data name plate in accordance with the applicable requirements of MIL–STD–130 except the requirements for; (a) Methods of applying, (b) Identification tags, (c) Information not required, and (d) Optional marking information shall not apply. The data name plate shall be made of minimum 20 gauge corrosion resisting metal, and attached to the food warmer by rivets, screws, or by welding, in such a manner as to meet the applicable National Sanitation Foundation requirements for this equipment. The plate shall bear the following information which shall be stamped, engraved, or applied by photosensitive means:
National Stock Number
Procurement Instrument Identification Number
Specification Data
Manufacturer’s Name, Address, and Telephone Number
Supplier’s Name, Address, and Telephone Number (List only if different from Manufacturer)
Manufacturer’s Model Number
Government Approved Manual Number (see 5.2)
Each plate shall be placed so as to be readily visible to the operator during normal operation and use, and so as to not adversely affect the life or utility of the food warmer.
2.9 Standards compliance. The food warmer shall comply with the requirements of the National Sanitation Foundation Standard No. 4 and Underwriters Laboratories Standard No. 197. Plugs shall comply with the applicable requirements of the National Electrical Manufacturers Association (NEMA) Standard WD1.
