2/ Compartment configuration shall be so arranged that each shelf/rack of size A ovens will accommodate a nominal 18-inch by 26-inch (457 mm x 660 mm) sheet pan or roasting pan, and each shelf/rack size B ovens will accommodate two 5-set bread pans, conforming to A-A-422. Pans specified shall not interfere with oven interior and contents of the load pans shall not contact oven surfaces, shelves or racks during roasting or baking operations.
2.2 Electrical characteristics. The type I, style 1, size A or B, and the type II, style 1, size A or B shall be equipped for operation on a 208 volt, 60 Hz, 3 phase system. The type I, style 2, size A or B and the type II, style 2, size A or B shall be equipped for operation on a “220/380volt, 50 Hz, 3 phase, four wire system. When style 2 is specified the oven heating unit shall operate on 380 volts, 3 phase and the fan and lights shall operate on 220 volts, 1 phase. An integral transformer shall be provided to step down the 22Clvolts for control system operations. The type I, style 3, size A or B and the type II, style 3, size A or B shall be equipped for operation on a 240/415 volt, 50 Hz, 3 phase, four wires system. When style 3 is specified the oven heating unit shall operate on 415 volts, 3 phase and the fan and lights shall operate on 260 volts, 1 phase. An integral transformer shall be provided to step down the 240 volts for control System operation. Each oven shall be equipped for permanent connection to the power source and have a total input rating of not less than 10.4 kilowatts per compartment.
2.2.1 Thermostat. Each oven compartment shall be equipped with an automatic thermostat capable of maintaining an oven temperature within the range of 2000F to 4500F. An “OFF” position shall be marked on the thermostat dial or a separate “ON-OFF” switch shall be provided.
2.3 Codes and standards. The ovens shall comply with the applicable requirements of Underwriter’s Laboratories (UL) Standard No. 197 and National Sanitation Foundation (NSF) Standard No. 4.
2.4 Data name plate (Government unique requirement (see 5.4)). The oven shall be furnished with a data name plate in accordance with the applicable requirements of MIL-STD-130 except the requirements for: (a) Methods of applying, (b) Identification tags, (c) Information not required, and (d) Optional marking information shall not apply. The data name plate shall be made of minimum 20 gauge corrosion-resisting metal and attached to the oven by rivets, screws, or by welding in such a manner as to meet the applicable National Sanitation Foundation sanitary requirements for this equipment. The plate shall contain the following information which shall be stamped, engraved, or applied by photosensitive means:
