2.1 Design and construction. The oven’s exterior surfaces except the bottom and back shall be stainless steel conforming to any of the type 300 series of ASTM A 167. The oven compartment and door lining shall be stainless steel. Each oven compartment shall be equipped with removable stainless steel top, right and left hand side, panels and a bottom oven liner panel. Each oven shall also be equipped with five equally spaced shelves capable of supporting a load of 20 pounds per square foot, supported by removable shelf supports, heating units, an oven light, an automatic adjustable thermostat, a two speed blower, an oven indicator light, and a 5 hour timer with alarm. All controls switches: and indicator light(s) shall be in a control panel at the front of the oven. The oven blower and heating units shall be interconnected so that the oven blower operates whenever the heating unit circuit is engaged and the door(s) are closed. The oven shall be equipped with an air baffle and vent operated from the control panel to control moisture in the baking chamber. The oven shall preheat from ambient temperatures of 750 to 3500F in 10 minutes. The oven doors shall be vertically split, side opening type, with heat-resisting glass viewing window(s), and when closed, shall visibly seal the oven compartment. A handle shall be provided on each door, or when one handle is provided on an oven, both doors shall operate simultaneously when opening and closing. The type I oven shall be mounted on stainless steel legs or on an open or inclosed stainless steel supporting stand. The stainless steel for the legs or the stand shall conform to any of the type 300 series of ASTM A 167 or type 400 series of ASTM A 176. All ovens shall be equipped with adjustable legs. The type II oven shall consist of two type I ovens of the same style stacked and secured. Each oven compartment shall operate independently.
2.1.1 Dimensions. The ovens shall be within the dimensional limits shown in table I.
