2. SALIENT CHARACTERISTICS
2.1 Counter design and construction.
2.1.1 Type I counter. Top surface and the frost top area shall be fabricated of 300 series stainless steel with a thickness of 18 gauge (minimum). The outer housing of the frost top area shall be fabricated of galvanized steel with a thickness of 22 gauge (minimum). The space between the frost top area and the outer housing shall be filled with insulation. The sides shall have a minimum of 1 inch insulation and the bottom shall have a minimum of 1-1/2 inch insulation. A breakerstrip shall be installed to prevent frost transfer to the supporting edge. A vinyl gasket around the full perimeter of the top edge shall be provided to seal the cold food counter when installed. The counter shall be equipped with a frost top area perimeter trough and a minimum 1 inch drain to collect melted condensate. A breath guard extending over the food product area shall be provided.

2.1.2Type II counter. Top surface and inner well surface shall be fabricated of 300 series stainless steel with a thickness of 18 gauge (minimum). Outer housing of well shall be fabricated of galvanized steel with a thickness of 22 gauge (minimum). The space between the inner and the outer housing shall be filled with insulation. The sides shall have a minimum of 1 inches insulation and the bottom shall have a minimum of 1-1/2 inch of insulation. A breakerstrip shall be installed to prevent frost transfer to the supporting edge. A vinyl gasket around the full perimeter of the top edge shall be provided to seal the cold food counter when installed. The inner well shall be provided with a minimum 1 inch drain. Pan adapters shall be provided to accommodate 12- by 20-inch pans. A breath guard extending over the food product are shall be provided.
