2. SALIENT CHARACTERISTICS.
2.1 Design. The freeze-dried coffee dispenser shall be designed for countertop or tabletop use and shall be manually activated. The dispenser shall consist essentially of a water storage tank, a container for freeze-dried coffee, two push-type switches, one for coffee and one for hot water, drip-tray with grill, water heater, thermostat, plumbing, base, and the necessary controls and mixing devices to combine and dispense the water and the freeze-dried coffee in the proper proportion for the hot coffee drink. The entire unit shall be inclosed in a corrosion-resistant material cabinet. The base shall be provided with protectors to prevent damage to the surface the dispenser rests upon. The dispenser shall be complete and ready for operation when connected to electrical and water supplies. The water heater and thermostat shall be capable of raising the temperature of a full tank of water to 185 + 5°F in no longer than 30 minutes and sustaining the heated water at that temperature while dispensing 6-ounce cup quantities at the rate of 100 cups per hour when using supply water at 50oF + 5°F at 30 to 120 psig. The freeze-dried coffee throw shall be selected from the adjustable amounts between 1.5 + 0.15 and 2.0 L 0.20 grams per 6 ounces of water. The grain size of the freeze-dried coffee shall be such that the percent retained on the following ASTM E 11 sieves (U.S. standard sieves) after 5 minutes on a testing sieve shaker (RO-tap or equivalent) shall be as specified in table I.

2.2 Electrical requirements. The type I dispenser shall be designed to operate on a 120 volt, 60 Hertz, single phase electrical source. The type II dispenser shall be designed to operate on a 220 volt, 50 hertz, single phase electrical source.
2.3 Codes and standards. The freeze-dried coffee dispenser shall comply with Underwriters Laboratories, Inc. Standard No. 197 and National Sanitation Foundation Standard No.18.
2.4 Data name plate (Government unique requirement see 5.4). The dispenser shall be furnished with a data name plate in accordance with the applicable requirements of MIL-STD-130 except the requirements for; (a) Methods of applying, (b) Identification tags, (c) Information not required, and (d) Optional marking information shall not apply. The data name plate shall be made of minimum 20 gauge corrosion resisting metal, and attached to the dispenser by rivets or screws in such a manner as to meet the applicable National Sanitation Foundation requirements for this equipment. The plate shall bear the following information which shall be stamped, engraved, or applied by photosensitive means:
