The kettles shall be provided with a 1-1/2 inch tangent drawoff, unless otherwise specified (see 5.2), which shall be located at the bottom of the kettle body. The kettles shall be equipped with a pressure regulator, an automatic ignition system, and a 100% automatic shut-off device. A swing-spout water supply system shall be provided. When specified, a hot and cold water supply system shall be provided (see 5.2). Also, a low water cut-off shall be provided.
2.1.1 Controls. All controls shall be enclosed and shall operate on a nominal 115 V, 60 Hz, single-phase electrical system.
2.1.2 Covers. The kettles shall be equipped with one-piece covers with handles. The type of cover shall be specified as hinged or counter balanced (see 5.2). Hinged covers shall be available for the 20 and 40 gallon sizes and counter balanced covers shall be available for 40, 60, and 80 gallon sizes.
2.2 Standard compliance. The kettles shall comply with the applicable requirements of ANSI Z 83.15, ASME Sections IV and VIII, ASTM A240, NSF International Standard No.4, and UL Standard No. 197 (see 3.2).
2.3 Users instructions (“Government unique” requirement). Operating instructions shall be on an aluminum, brass, or stainless steel plate, permanently affixed to the item. Marking shall be stamped, embossed, engraved or applied by photosensitive means. The plate shall contain the information listed below. The words “STEAM-JACKETED KETTLE” shall be not less than 3/16 inch high and the words “USER’S INSTRUCTION” shall be not less than 1/8 inch high. All other characters shall be not less than 3/32 inch high. The plate shall be mounted so as to be visible to the operator.

USER’S INSTRUCTIONS
1. Do not tamper with or obstruct safety valve.
2. Wash and sanitize kettle before each use. Wash with hot soapy water. Sanitize all food contact surfaces either by rinsing, spraying, or swabbing the kettle with a solution of 100 parts per million (ppm) available chlorine or 25 ppm available iodine. Rinse thoroughly without allowing water to enter into the control housing. Dry thoroughly inside and outside.
3. Leave cover open when not in use.
4. Never turn on gas unless level of water recommended by manufacturer is observed in gauge glass.
