2.1.2 Cabinet base. The totally enclosed cabinet base shall be provided with four 6 inch adjustable legs, front opening doors, a sink with strain and drip stray, and a back-splash.
2.1.3 Steam generator. The 200,000 BTU (minimum) gas operated steam generator shall be located in the cabinet base and shall be designed for operation at a pressure not to exceed 15 psig. The generator shall be provided with the necessary piping and valves for connection to the kettles. The generator shall also be provided with drains and a lower water safety cutoff. All controls shall operate on a 120 volts, 60 Hz single-phase system. The generator shall operate on natural gas and shall be equipped with an automatic ignition system and a 100% automatic shut-off device.
2.1.4 Standard compliance. The tilting kettle assembly shall comply with applicable requirements of UL Standard No. 197, ANSI Z83.15, ASME Sections IC and VIII; and NSF International Standard No. 4.
2.2 User instructions (“Government unique” requirement). Operating instructions shall be on an aluminum, brass, or stainless steel plate permanently affixed to the item. Marking shall be stamped, embossed, engraved or applied by photosensitive means. The plate shall contain the information listed below. The words “STEAM-JACKETED KETTLE” shall be not less than 3/16 inch high and the words “USER’S INSTRUCTIONS” shall be not less than 1/8 inch high. All mother characters shall be not less than 3/32 inch high. The plate shall be mounted on the inner door of the cabinet.

USER’ INSTRUCTIONS
1. Caution: Steam supply shall not exceed 15 psig.
2. Do not tamper with or obstruct safety valve.
3. Do not clean with abrasives.
4. Wash and sanitized kettle before and after each use with hot soapy water and rinse thoroughly with clean hot water. Sanitize all food contact surfaces either by rinsing, spraying, or swabbing the kettle with a solution of 100 parts per million (ppm) available chlorine or 25 ppm available iodine.
5. Do not turn steam on unless water or food is in the kettle.
6. Do not put water in hot dry kettle.
