an ambient temperature of 70o to 400oF within 20 minutes. Oven doors shall be vertically split, side opening type, with heat-resisting viewing windows. When in fully opened position, doors shall open flush with interior oven sidewalls and shall not obstruct removal of the shelves. A handle shall be provided on each door or one handle to open and close the doors simultaneously. Each convection oven shall be provided with a latch, clip, or other means to hold the doors in the closed position. The type I oven shall be mounted on legs or mounted on an open or inclosed stainless steel stand. All ovens shall be equipped with stainless steel legs with leveling devices. The oven shall be equipped with an air baffle and vent operated from the control panel to control moisture in the baking chamber.
2.2 Dimensions. The ovens shall be within the dimensional limits shown table I.

2.3 Fuel system. The oven shall be designed to burn natural gas or liquefied petroleum gas (LPG) with conversion kit. Each oven rating shall not exceed 120,000 BTU/hr. The ovens shall be equipped with an automatic pilot of the 100 percent shut-off type, pressure regulator and automatic gas ignition system. For main burners, the pilot shall automatically shut off the gas to all oven burners including oven pilot burners in the event that means of ignition become inoperative. An ANSI Z21.41 approved quick disconnect (socket and plug) and a 5-foot minimum flexible metal connector consisting of a male pipe thread fitting on one end and union with female thread on the opposite end conforming to ANSI 221.45 shall be supplied with each oven.
