COMMERCIAL ITEM DESCRIPTION
STEAM TABLE, HOT FOOD, GAS
The General Services Administration has authorized the use of this Commercial Item Description in preference to size 4, 5, and 6, type E. of Military specification MIL-T-43908A (GL) and type III.
Intended use.
The hot food tables are intended for use in dining facilities.
Salient characteristics.
Sizes. The tables shall be furnished in the following sizes as specified:
Size 4 - Four food storage compartments for four 12 by 20 inch food pans.
Size 5 - Five food storage compartments for five 12 by 20 inch food pans.
Size 6 - Six food storage compartments for six 12 by 20 inch food pans.
Description. The hot food tables shall maintain food at the correct serving temperature with moist heat while the food is being dispensed. The size 4, 5 and 6 table top shall accommodate 4, 5 and 6 food pans (12 by 20 inch), respectively.
Cabinet. The cabinet body shall be closed on three sides and have a dish shelf and bottom shelf. The open side shall be on the attendant’s side. The cabinet shall be fabricated of stainless steel. The hot food table shall be equipped with a stainless steel carving shelf on the attendant’s side and a stainless steel tray shelf on the patrons side, the full length of the table. Also, the cabinet shall be equipped with stainless steel adjustable legs.
Food compartment wells. Food compartment wells shall be constructed of stainless steel and provided with a drain and valve installed in each compartment. Each compartment shall be insulated. Valves shall be operated from the attendant’s side.
Fuel system. The hot food table shall be designed to burn natural gas. Each food compartment shall be equipped with a gas burner rated at 3500 BTU/hr minimum. Gas filters shall be provided for all pilots. An automatic pilot including a 100 percent shut off shall be provided on each compartment. A pressure regulator shall be provided with each hot food table. An ANSI approved quick disconnect (socket and plug) and a 5 ft. minimum flexible metal connector consisting of a male pipe thread fitting on one end and a union with female thread on the opposite end shall be provided with the hot food table.
Thermostats. Each burner shall be equipped with an adjustable thermostat installed in the temperature control system. An “OFF” position and graduations evenly spaced shall be marked on the thermostat dial and with a temperature range of 140° to 200°F.
