2. SALIENT CHARACTERISTICS.
2.1 Type I, style 2. The type I, style 2 griddle shall consist essentially of a griddle top supported by a wraparound stainless steel body that houses the heating elements, thermostats, and grease drawer with baffles, mounted on a stand. The griddle surface top shall be smooth with a minimum thickness of 1/2 inch. Effective griddle surface area shall be a minimum of 805 square inches (36 inches by 24 inches deep). Exterior body, splash guard, and grease receptacle shall be fabricated from stainless steel. The grease receptacle shall have a capacity of not less than 4 quarts. The griddle surface top shall be equipped with a built–in grease gutter which shall drain into the grease receptacle. The grease receptacle shall be rigidly supported, designed to reduce splashing, and provided with a handle to facilitate removal. The griddle shall have a minimum of three heat zones, each controlled by an individual thermostat. Thermostatic dials shall have graduations at intervals not greater than 25oF with a minimum operating range of 200oF to 450°F. All operating controls shall be conveniently located on the front panel and shall be either recessed or provided with guard(s) to prevent damage from mobile equipment. Each thermostat shall have a signal light that glows when the heating element is drawing current and goes out when the set temperature is reached. The griddle shall be capable of pre–heating to 350°F in a minimum of 12 minutes. A splash guard shall be provided on the back and two sides of the cooking surface. The splash guard shall be not less than 3 inches high on the back and may be tapered to the front on the sides. The splash guard shall be continuously welded to the griddle place to prevent cooking oil from seeping into the interior of the griddle. The griddle shall be designed to operate on the following electrical power sources:
Type I - 208 volts, 60 hertz, 1 phase
Type II - 208 volts, 60 hertz, 3 phase
Type III - 208/230 volts, 60 hertz, 3 phase
Type IV - 220 volts, 50 hertz, 1 phase
Type V - 380 volts, 50 hertz, 3 phase
Power consumption shall be a minimum of 16 kW and a maximum of 20 kW. The stand shall be of the open frame type design, and shall be entirely fabricated from stainless steel, including the undershelf. The stand shall be furnished as either a separate unit or an integral part of the griddle, so constructed that the griddles can be banked together in battery alignment. When the stand is furnished separately, means shall be provided to firmly secure the griddle to the stand and allow for easy removal of the griddle. The stand shall be capable of supporting the griddle and a uniformly distributed load of 200 pounds placed on the cooking surface and moved a distance of 10 feet without damge or deformity to the griddle or stand. The stand shall be equipped with four heavy-duty, 5–inch diameter casters, two of which shall be of the swivel type. Two of the four casters shall be equipped with brakes. The overall dimensions shall not exceed 37 inches wide by 32 inches deep. The height from the floor to the top of the griddle surface shall be a minimum of 34 inches. The griddle shall comply with Underwriters Laboratories (UL) Standard No. 197 and National Sanitation Foundation (NSF) Standard No. 4. The griddle stand shall comply with NSF Standard No. 2 or No. 4.
2.2 Type II, Style 2. The type II, style 2 griddle shall conform to all of the requirements for type I, style 2 griddle except that the griddle shall be designed to operate on a 208 volt, 60 hertz, 3 phase power source.
2.3 Type III, style 2. The type III, style 2 griddle shall conform to all of the requirements for the type I, style 2 griddle except that the griddle shall be designed to operate on a 208/230 volt, 60 hertz, 3 phase power source.
